Overview

The Stewarding Supervisor is responsible for overseeing non-food production areas within the kitchen such as dishwashing, dish-out and break-down stations, and storage areas. The Stewarding Supervisor will ensure that all kitchen stewarding staff properly clean and handle all kitchen equipment, utensils, and dishes, as well as properly stock supplies, receive orders, and maintain inventory. The Stewarding Supervisor will also ensure that all kitchen staff, both cook and stewards consistently adhere to food safety standards.

 

This role will pay an hourly wage of $20 to $24.

Responsibilities

    • Ensures cleanliness standards for all kitchen equipment, utensils, dishes, and general kitchen spaces are met by conducting an internal Food Safety Audit/Inspection on a weekly basis, conducting corrective actions as identified, and communicating Food Safety needs and expectations from the audit findings.
    • Ensures the highest levels of sanitation for all kitchen items and equipment previously used so that they may be used again in clean and safe condition, free of any contamination risk or broken pieces.
    • Ensures that all kitchen areas are clean and organized, including floors, walls and counter tops.
    • Works closely with the Head Chef, Executive Sous Chef, and Sous Chef to understand, coordinate, and plan daily needs and activities of the stewarding department with agility and flexibility.
    • Directly responsible for the set up, tear down, and execution of all Dish-out and Break-down stations for all events.
    • Regularly inspects kitchen storage rooms and shelving to ensure that the premises and equipment are clean and fully stocked, including floors, walls and counter tops; and that all areas adhere to safety and safe food holding standards.
    • Ensures all kitchen stewards have and use the proper equipment necessary for the job (gloves, goggles, chemicals, etc) by taking regular inventory and inspection of product, chemicals, tools, and equipment.
    • Trains all kitchen stewards to ensure they have the proper and full understanding of Food Safety and cleaning standards and expectations of OVG.
    • Regularly stocks supplies and maintain inventory of cleaning and sanitation products, and communicates any needs via the BOH Order Guide Sheet.
    • Assist in food preparation and plating, as needed or requested by Chefs.
    • Maintains a safe and hygienic work environment at all times.
    • Responsible for supervising all Stewarding staff and the overall daily management of a designated shift within the dish room, at dish-out stations, and at break-down stations.
    • Operate and maintain kitchen stewarding equipment, such as dishwashers, hot boxes, garbage disposals, chemical dispensers, mops, Cadillac’s, etc.
    • Attends all weekly BEO meetings while bringing and maintaining a fully updated BEO Binder to each meeting, ready with questions and/or comments to contribute to the overall conversations occurring during this meeting.
    • Attend a weekly culinary leadership team meeting to discuss upcoming events, scheduling, projects, R&M, Cleanliness, etc.
    • Assists in organizing and conducting quarterly occurring kitchen staff meetings that directly address Food Safety and Sanitization topics.
    • Perform other duties as assigned by the Head Chef or Kitchen Manager

Qualifications

  • Previous kitchen experience required.
  • Knowledge of food safety and sanitation regulations.
  • Ability to operate and maintain kitchen equipment, such as dishwashers, garbage disposal, hot boxes, etc.
  • Strong organizational skills and attention to detail.
  • Ability to work in a fast-paced environment and handle multiple tasks simultaneously.
  • Strong communication skills and ability to work effectively in a team setting.
  • Willingness to work flexible hours, including early mornings, nights, weekends and holidays.
  • Physical ability to life and move heavy objects, such as boxes and equipment.
  • High school diploma or equivalent preferred, but not required.
